I will be experimenting with a couple of hot wing recipes this Super Bowl Weekend. Here’s what you do to make better wings.

Brine your wings in a kosher salt, sugar brine 1 cup of salt to 1/2 cup of sugar to every gallon of water or your favorite Beer. Put wings in a cooler or a container and let sit over night. If you are really ambitious you may brine your wings in BEER also!!!

If they are in a cooler be sure and keep them cold with ice over night you don’t want them to get over 40 degrees. Rinse and pat dry. Put on racks and let air dry why you prepare your sauce.

Here are a couple of sauces I am going to use this weekend.

Chuoula and worchestershire a little bit of butter – I’m not giving my measurements to give away all of my secrets!!! Melt butter and combine all ingredients toss and grill or bake till they temp at 165. We grill our wings with salt pepper and granulated garlic and then finish them in the oven after we toss them in the sauce.

Orange Chipotle spicy wings – Orange juice concentrate, Chipotle peppers, Lime Juice and Cilantro. I may soak my wings in this before I grill these Marinate for up to 8 hours. Follow directions above.

Mango, Pineapple, Cilantro, Chipotle pepper marinade – I will make a slurry with this and toss after grilled and heated in oven. The sweetness and sugars of the fruit will caramelize and could burn on the grill so be careful!!!

Bar-B-Que wings!! Sweet and tangy. I make my own sauce, but you could add hot pepper jelly to a bbq sauce and melt the jelly or chutney on a sauce pan and add your store bought sauce to a mild simmer and stir till combined and let cool and toss wings when they are about finished on the grill or finish them in the oven. Remember the sugars will burn if not careful.

Be sure to line the grill or pans with foil to help with cleanup. Cheers!!!
